About two weeks before harvesting, the bushes are shaded with bamboo mats. With less sunlight, the leaves begin to produce more chlorophyll and fewer tannins. The tea leaves are dark green and delicately shiny in the shape of long needles, which develop a fresh green hue after brewing. The taste of this tea is deep and surprising. On the one hand, it is very subtle and velvety, while on the other, strong, characteristic notes of Gyokuro break through. A delicate aftertaste of sweetness completes the whole composition, giving the impression of a full and well-balanced brew.
In Japan - because of the elegance of this unusual tea - it is served especially to guests of honor.
