Harvesting takes place in March, when the spring sunshine dries the dewy tea bushes. After picking, the buds undergo a withering process, followed by slow drying outdoors or in special rooms where a constant temperature is maintained. The long, slightly green leaves are covered with a fine mesquite. After brewing, they unfurl beautifully, giving all their aroma and flavor to the brew.
