Yerba Mate - Paraguayan holly
Yerba Mate is an infusion made from the leaves of the Paraguayan holly. The infusion of yerba mate, also known simply as mate, is particularly popular in South American countries (Argentina, Paraguay, Uruguay, Brazil), where it is the equivalent of our tea or coffee. It is a widely cultivated evergreen tree of medium height, reaching up to 20 meters in the wild. In cultivation, it is usually pruned to a shrubby tree measuring 4-5 m to facilitate harvesting. In the wild, it is found near streams, at about 450-600 meters above sea level. It has graceful, leafy branches and white flowers that produce small red, black or yellow fruits. After harvesting, Mate leaves and twigs are roasted for a short time to avoid oxidation, then dried and crushed. After a period of aging, they are mixed in the right proportion to create a version of elaborada- mate with a normal stalk content, which is about 30%- or despalada- a stronger version where the stalks are no more than 10%.
