Red tea - Pu Erh
Tea leaves are picked and twisted, left to mature in this way, at which point the process of microbial fermentation occurs - prolonged exposure of the leaves to micronutrients. The result of this process is a dark tea with an earthy taste that takes some getting used to. Thanks to its slimming properties, we reach for it quite often. It is found primarily in Yunnan province, and it is the tea produced there that is called Pu Erh (red teas from other regions cannot use this name). It is available in various forms. It can be loose leaf fermented in stacks or pressed lumps of various shapes and sizes (the most popular: Bingcha, Tuocha, Zhuancha). Good red tea has a slightly peony smell, but must not reek of mold. As a general rule, the more expensive the red tea, the better. There are rarely exceptions to this rule.

Important! There are two types of Pu Erh red tea
Pu Erh sheng (raw/"raw")-a tea not subjected to the accelerated aging process of wodui. It comes in two varieties: green (green) and aged (aged). Green is the form in which the tea has not undergone microbial fermentation or has been given very little, and is quite pungent and bitter in taste. The aged variety is a tea in which the fermentation processes occur naturally, without aiding them, for many years (from several to even dozens), mild in taste, with a unique multi-level flavor. Both varieties can be formed from different parts of the tea bush, the tea formed from the finest buds and aged for a short time (1-2 years) is called white Pu Erh. Pu Erh shou (mature/"ripe")-controlled microbial fermentation is part of the tea's accelerated aging process. Wodui involves subjecting tea leaves to fermentation processes using microorganisms and fungi that develop when exposed to steam and elevated temperatures. The leaves are characterized by a dark color, the infusion with a specific earthy aroma.
