Gingerbread with tea Moments by the Fireplace

Ingredients:

  • 1 cup of strong infusion of Moment by the Fireplace tea
  • 3 cups of flour
  • 1 cup of honey
  • 3/4 cup of oil
  • 3/4 cup sugar (or to taste)
  • 5 eggs (L)
  • 2 teaspoons of baking soda
  • gingerbread spice
  • 3 tablespoons of bitter cocoa
  • pinch of salt
  • a jar of orange jam
  • Lemons with vanilla from Czas na Herbatę
  • 2 dark chocolates (200 g)

Method of preparation:

  1. Beat the eggs with the sugar until pale and creamy. Add the oil and the cooled "Moment by the Fireplace" tea infusion. Mix well. Combine the dry ingredients and add them to the wet ingredients. Mix thoroughly again.
  2. Grease the baking tin with butter or oil and sprinkle with breadcrumbs. Preheat the oven to 180°C (350°F), using the top-bottom function. Pour the batter into the tin, let it rest for 10 minutes, and then place in the oven. Bake for about 60 minutes, or until a toothpick inserted into the pan comes out clean. Cool the cake on a wire rack.
  3. Cut the gingerbread in half and fill it with jam. Melt the chocolate in a double boiler. Once melted, gradually add the lemon juice with vanilla extract until you achieve the desired consistency. The chocolate shouldn't be too thin. Spread the slightly cooled chocolate over the cake. Top with the lemon juice with vanilla extract from Czas na Herbatę.
