Summer cheesecake with fruit

Ingredients:

  • 800 g homogenized cheese
  • 8 tablespoons of Happy Kids tea
  • 5 teaspoons of gelatin
  • 2 lemon jellies
  • 800 g strawberries + a few for decoration
  • 7 tablespoons of cane sugar
  • lemon balm for decoration

Method of preparation:

  1. Dissolve the lemon jelly in two cups of water (500 ml), add 4 tablespoons of sugar. Let cool.
  2. Steep the tea in 2 cups (500 ml) of water for about 10-12 minutes. Strain, add the gelatin and 3 tablespoons of sugar. Let cool.
  3. Mix the cheese at room temperature with the cooled lemon jelly.
  4. Line the form (diameter: 24 cm) with rinsed and cleaned strawberries.
  5. Pour the cheese-jelly mixture over the strawberries.
  6. Pour the cooled tea jelly into the mold.
  7. Place the form in the refrigerator (not the freezer) for at least 3-4 hours or overnight.
  8. Before serving, decorate the cheesecake with strawberry pieces and lemon balm.
