Colorful mojitos

Ingredients:
- Blue Butterfly Pea
- sparkling water
- lime leaf
- rum
- cane sugar
- ice cubes
- mint leaf
Method of preparation:
- Pour 100ml of boiling water over 1 teaspoon of Blue Butterfly. Cover and steep for about 5 minutes, then separate the flowers from the infusion. Let cool.
- Cut the lime into slices
- Mash a lime, a few mint leaves and a teaspoon of cane sugar into a glass.
- Add crushed ice.
- Add 50 ml of rum (can be omitted for a non-alcoholic version)
- In a separate jug, mix the sparkling water with the Blue Butterfly infusion.
- Fill the glass with tinted sparkling water.
- Garnish with mint leaves.
