A type of coffee native to Southeast Asia (Indonesia), made from coffee beans that are extracted from the feces of an animal called a tickler (pop. civet, Latin: Paradoxurus hermaphroditus). The weasel eats the coffee fruit, which is then digested by digestive enzymes and slightly fermented thanks to lactic acid-producing bacteria. The beans then pass through the digestive tract and are excreted. The animal selects only the best, most ripe coffee cherries, and by passing through the tickler's digestive tract, the coffee beans lose their bitter taste and the coffee made from these beans gains a new, mild flavor. Kopi Luwak is the strangest and most expensive coffee in the world, and the amount of beans is rather limited (annual production is about 500 kg). The very high price is due to this rarity.
