Where does rooibos tea come from?

Rooibos, or African red bush (Aspalathus linearis), is a shrub native to South Africa, and has only been known in Europe for 100 years. Its leaves are processed similarly to tea leaves and used for drinking as an infusion. It grows in South Africa in the Cederberg Mountains, about 300 km from Cape Town. The natural habitat of these plants has been used for large-scale cultivation. This is an area that is inhospitable to other plants, characterized by sandy soils and very dry summers - but these are ideal conditions for the development of red bush. The leaves of rooibos, used for tea production, are narrow and oblong. They are usually harvested in January, when it is the middle of summer in the southern hemisphere.

The process of making rooibos tea

The tops of at least two-year-old redwoods are used to make tea infusion. The clipped leaves and stems are first fermented and then shredded into smaller pieces, which are spread on concrete and pressed. Later, the rooibos particles are moistened with water and piled into small mounds, where the tea ferments for several days in a warm place. During this process, the green leaves turn a reddish amber color. However, this is not the final stage of production. After fermentation, the rooibos still needs to be dried and stored, which takes about 3 months.
